&lt;p&gt;This post is sub-titled “I ROCK” because this was amazing.&lt;/p&gt;
&lt;p&gt;I basically stole the recipe from &lt;a title="bolognese sauce" target="_blank" href="http://www.rachaelrayshow.com/food/recipes/bolognese-pappardelle/"&gt;Rachel Ray&lt;/a&gt;, who I hate but sometimes she turns out some awesome dishes.  I halved this recipe because I had most ingredients here except for ground pork. I didn’t have any carrots either which are good for color and texture but I managed.  I also had to improvise a bit with chicken brother instead of beef stock and I had to use some tomato sauce instead of paste.  I just reduced the amount of liquids to account for the sauce and it turned out perfectly.  I also added more red pepper because I like it a bit spicy but otherwise this was good.&lt;/p&gt;

&lt;/p&gt;&lt;ul&gt;&lt;li&gt;saute 4 chopped scallions, 4 cloves garlic, hot pepper (hot thai chilis if you have them) in oil - I used coconut typically&lt;/li&gt;
&lt;li&gt;add 1lb diced or cubed chicken (traditional Thai uses ground)&lt;/li&gt;
&lt;li&gt;when chicken is done add 2 tbsp fish sauce and a little soy&lt;/li&gt;
&lt;li&gt;add 1 cup of holy basil (or Thai basil. Not sure where to find so I use regular basil.  not sure what the difference in taste is but curious)&lt;/li&gt;
&lt;li&gt;add 1lb steamed broccoli&lt;/li&gt;
&lt;li&gt;cook a few more minutes and enjoy&lt;/li&gt;

&lt;ul&gt;&lt;li&gt;1 cup chopped scapes&lt;/li&gt;
&lt;li&gt;1/3 cup olive oil&lt;/li&gt;
&lt;li&gt;1/3 cup pine nuts&lt;/li&gt;
&lt;li&gt;1/3 cup water&lt;/li&gt;
&lt;li&gt;salt and pepper&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Blend till smooth in food processor…marinate chicken in pesto…grill.  This would be tastier with some parmesan but alas I’m trying very hard to cut the dairy out of this paleo diet.
